Recipe Ingredients
- (a) rice noodles
- (b) cucumber, carrot, shishito pepper
- (c) creamy sichuan peppercorn aioli
- (d) soaked bamboo skewers
- (e) spiced ground pork, impossible burger
- (f) coconut lime sauce
- (g) chili spiced peanuts

Recipe Directions
- Preheat your grill on high heat.
- Fill a 4-6 quart pot 2/3 full with water. Put the pot on the stove over high heat. Add 1 tbsp of salt to the water. (The water should taste salty). Bring to a boil. When the water has started to boil, pour the uncooked rice noodles (a) into a strainer and quickly rinse off in your sink. Then add the noodles to the pot of boiling water. Cook to your preferred consistency (around 6-8 minutes).
- When the noodles are ready, taste a noodle to ensure it is cooked to your liking. Strain the water and rinse the noodles thoroughly with cold water. Pour the noodles into a mixing bowl. Add the cucumber, carrot and peppers (b). Season with a pinch of salt and pepper. Pour the sichuan peppercorn aioli (c) on top and mix everything together with tongs or your hands. Set the noodles aside while you prepare the pork.
- Use scissors to cut open the package of seasoned ground pork (d) and place on a plate. Open the package of skewers (e) and lay them beside the pork. (Note: you do not have to soak the skewers as they have been pre-soaked). You will have enough meat to make 2 skewers / serving.
- Divide the pork into equal portions. Form the meat into an oblong, sausage-like shape, and slide onto a skewer. Press the ground pork around the skewer so that it supports the meat. Repeat with remaining skewers.
- Place the pork skewers on your preheated grill horizontally and cook for 4-7 minutes (depending on how well you like your pork cooked). Then flip the skewers over and grill for another 4-7 minutes. Check often to make sure the pork is not burning. At any time, if the outside of the pork is getting too charred, turn the grill down to medium. Make a small cut into the middle of one piece of pork to make sure it is cooked through.
- When the pork has finished cooking, transfer to a clean plate. Pour the coconut lime sauce (f) over the meat. Spoon the chilled noodle salad on to your serving plates. Place the pork skewers on top. Sprinkle chili spiced peanuts (g) and drizzle any remaining sauce on top.
