Recipe Ingredients

  • (a) brown rice
  • (b) ginger roasted pork, cremini mushroom
  • (c) mint, cilantro
  • (d) bibb lettuce
  • (e) pickled vegetable medley
  • (f) seasonal fruit nam prik
  • (g) cucumber, red radish, daikon radish

Recipe Directions

  1. For best results, take the pork out of the refrigerator 10 minutes before starting to cook. If you skip this step, you may need to cook the pork longer than this recipe card indicates. Preheat your oven to 425 degrees fahrenheit.
  2. Fill a 4-6 quart pot 2/3 of the way full with water. Put the pot on the stove over high heat. Add a pinch of salt to the water. Pour the brown rice (a) into the pot of boiling water. Stir well with a wooden spoon and cook for 30 minutes, stirring occasionally.
  3. Wait until the rice has cooked for 20 minutes, then cut open the package of pork (b). Do not season the meat as it has been cured. Heat a skillet or saute pan over medium-high heat for 2 minutes. When the pan has warmed up, add 1 tbsp of olive oil or enough to coat the bottom of the pan. Place the pork in the pan and sear for 1 minute, then turn the pork over and sear the other side for 1 minute. After searing, place the pan in your 425 degree oven and bake for 4 minutes.
  4. While the pork and rice are cooking, pick the leaves from the herb stems (c) and put into a small bowl. Place the bibb lettuce pieces (d) on a serving plate. (Note: both the herbs and lettuce have already been washed). Put the pickled vegetables (e) in a serving bowl. Pour the fruit sauce (f) in a small bowl.
  5. When the pork has cooked for 4 minutes, it should be slightly charred and crispy. If not, put it back in the oven for a few more minutes. When the pork is ready, let it rest on a cutting board for 2 minutes.
  6. At this point the rice should be ready, drain and then rinse under cold water. Stir the rice and rinse with cold water once more. Let the rice drain in the strainer in your sink for 1 minute, then pour into a mixing bowl.
  7. Add the cucumbers and radish (g) to the mixing bowl of rice. Season with a pinch of salt and pepper and mix well. Pour the rice salad into a serving bowl.
  8. After resting, slice the pork very thin and place the slices on a serving plate. We recommend serving this dish family style, allowing everyone to assemble their own lettuce wraps. Lay out from left to right: lettuce pieces, brown rice salad, sliced pork, pickled vegetables, fresh herbs and nam prik sauce.
