Recipe Ingredients

  • (a) jasmine rice
  • (b) mahi mahi fillet, turnip
  • (c) adobo sauce
  • (d) napa cabbage, carrot, red onion, red radish
  • (e) lime coriander dressing
  • (f) flour tortilla packs
  • (g) sriracha spiced pumpkin seeds

Recipe Directions

  1. For best results, take the fish out of the refrigerator 5 minutes before starting to cook. If you skip this step, you may need to cook the fish longer than this recipe card indicates. Preheat your oven to 425 degrees fahrenheit.
  2. Pour the jasmine rice (a) into a small saucepot. Add 2/3 cup of water (per serving) to the rice. Put the saucepot over medium-high heat and bring up to a simmer. Do not stir. Once simmering, stir the rice three times and then turn down to medium-low. Cover with a lid or foil and cook for 10-12 minutes or until the water is absorbed.
  3. While the rice is cooking, line a baking tray with foil. Cut open the package of mahi mahi (b) and place on the tray. Season with a small pinch of salt and pepper. Spoon 1/2 of the adobo sauce (c) on the fish and gently spread it over the entire fillet. Place the tray of fish in your 425 degree oven and bake for 5 minutes.
  4. While the fish is baking, add the cabbage, carrot, radish and onion (d) to a mixing bowl. Pour the lime & rhubarb dressing (e) over top. Season with a pinch of salt and pepper. Toss well to evenly coat the vegetables with dressing.
  5. When the mahi mahi has baked for 5 minutes, remove the baking tray from the oven. Spoon the rest of the adobo sauce on top and spread it around. Put the fish back in the oven and bake for 6 minutes.
  6. When the rice has finished cooking, fluff with a fork and spoon into a serving bowl.
  7. When the mahi mahi has finished baking, place in a bowl. Gently flake the fish with a fork by twisting the fork to break the fish apart. Taste and add salt and pepper if you wish.
  8. Remove the tortillas (f) from the package and wrap them in a dish towel or paper towel. Microwave for 30-60 seconds or until they are warm.
  9. We recommend letting each person assemble their own taco with the fish, rice, and slaw.
