Thai Curry With Steak & Peas

Recipe Ingredients

  • (a) jasmine rice
  • (b) flank steak, marinated tofu
  • (c) cauliflower, peas
  • (d) massman curry sauce
  • (e) cilantro

Equipment Needed

  • small saucepot
  • wooden spoon
  • measuring cup
  • scissors
  • skillet or saute pan
  • plate
  • cutting board & knife

Recipe Directions

  1. For best results, take the steak out of the refrigerator 10 minutes before starting to cook. If you skip this step, you may need to cook the steak longer than this recipe card indicates. Preheat your oven to 400 degrees fahrenheit.
  2. Pour the jasmine rice (a) into a small saucepot. Add 1/2 cup of water (for each serving you are preparing) to the rice. Put the saucepot over medium-high heat and bring up to a simmer. Do not stir. Once simmering, stir the rice three times and then turn down to medium-low. Cover with a lid or foil and cook for 10-12 minutes.
  3. While the rice is cooking, cut open the package of steak (b) and place on a plate. Season on both sides with a pinch of salt and pepper. Heat a skillet or saute pan over medium-high heat for 2 minutes. When the pan has warmed up, add 1 tbsp of oil or enough to coat the bottom of the pan. Place the steak in the pan and sear for 2 minutes, then turn the steak over and sear the other side for 2 minutes.
  4. After searing, place the skillet of steak in your 400 degree oven and bake for 5 minutes. After 5 minutes, pull the skillet out and flip the steak over. Put back in the oven for 3 minutes. After 3 minutes, place the steak on a cutting board to rest.
  5. When the rice is ready, remove from the heat and set aside while you finish the dish.
  6. Carefully wipe out the pan you used for the steak with a paper towel and place back on the stovetop over medium-high heat. Add 1 tbsp of oil or enough to coat the bottom of the pan. Add the cauliflower and peas (c) to the pan. Season with a pinch of salt and pepper. Saute for 2 minutes, stirring occasionally.
  7. After 2 minutes remove the pan from the heat. Add the massaman curry sauce (d) and then return the pan to the heat. Simmer for 2 minutes. Taste and add more salt and pepper if you wish. While the curry is simmering, pick the stems from the cilantro (e) and discard.
  8. Spoon the rice on to your serving plates. Slice the steak into 1/2 inch thick slices and place on top. Spoon the curry on the side. Garnish with cilantro.
