Recipe Ingredients
- (a) sweet potato
- (b) chicken leg, jerk marinade
- (c) jerk sauce
- (d) black bean mango salsa
- (e) bibb lettuce
Equipment Needed
- baking tray with foil
- skillet or saute pan
- scissors

- wooden spoon
- serving bowls
Recipe Directions
- For best results, take the chicken out of the refrigerator 10 minutes before starting to cook. If you skip this step, you may need to cook the chicken longer than this recipe card indicates. Preheat your oven to 325 degrees fahrenheit.
- Lay out the pieces of sweet potato (a) on a baking tray lined with foil. Drizzle 1 tsp of olive oil (for every serving you are preparing) over the sweet potatoes and toss to coat all of the pieces with oil. Sprinkle a generous pinch of salt and pepper over the sweet potatoes. Put the tray in your 325 degree oven and bake for 15-20 minutes.
- While the sweet potato is baking, heat a skillet or saute pan over medium-high heat for 2 minutes. When the pan has warmed up, add 1 tbsp of oil or enough to coat the bottom of the pan. Cut open the package of marinated jerk chicken (b) and place in the pan. Season with a pinch of salt and pepper. Cook for 2 minutes without stirring, then stir with a wooden spoon, and cook for another 3-5 minutes until the chicken has completely browned, stirring occasionally.
- When the jerk chicken has browned, add the jerk sauce (c) to the pan. (Note: the sauce is spicy). Stir well to coat the chicken with the sauce. Taste and add salt and pepper if you wish. Let the chicken rest in the pan off the heat.
- When the sweet potato is brown and soft to the touch, remove from the oven. Spoon into a serving bowl and spoon the jerk chicken in a separate serving bowl.
- Lay out a piece of bibb lettuce (e) on your plate. Spoon the jerk chicken and roasted sweet potato on the lettuce leaf. Top with black bean & mango salsa (d).

These were fanastic! The spiciness of the jerk marinade combined with the mellow sweetness of the sweet potatoes and black bean salsa were amazing. The bibb lettuce was the right size / shape and held up well to the tacos.
