Recipe Ingredients

Recipe Directions
- For best results, take the short rib out of the refrigerator 10 minutes before starting to cook. If you skip this step, you may need to cook the meat longer than this recipe card indicates. Preheat your oven to 325 degrees fahrenheit.
- Open the container of potatoes (a) and use the lid to drain out the water. Lay the potatoes on a baking tray lined with foil or parchment. Use paper towel to pat the potatoes dry. Drizzle 2 tsp of oil (for each serving you are preparing) over the potatoes. Toss with tongs or your hands to coat the potatoes with oil, and spread them out evenly on the tray. Sprinkle the seasoning salt (b) over the potatoes. Place the baking tray in your preheated 325 degree oven and bake for 10 minutes.
- When the potatoes have baked for 10 minutes, turn the oven temperature up to 425 degrees. Bake the potatoes for 5 more minutes or until golden brown.
- While the potatoes are baking, add the jus (c) to a saucepot. Put the pot on the stove over medium-high heat and bring up to a simmer, stirring occasionally. Once simmering, turn the heat down to medium or medium-low to maintain a simmer. Add the short rib (d) to the jus. Simmer for 2-3 minutes.
- At this point, your potatoes should be ready. Remove from the oven but keep the oven on. Brush the insides of the french baguette (e) with a small amount of oil. Place face-down on a baking sheet and warm in your oven until toasted.
- Build each sandwich by placing a serving of beef and jus inside the baguette. Add giardiniera (f) and crispy onion (g) on top of the beef. Serve the roasted potatoes on the side.
