Recipe Ingredients

  • (a) ground turkey, cumin rub, impossible burger
  • (b) corn, poblano peppers, anaheim peppers, red onion
  • (c) cooked black beans
  • (d) chipotle aioli
  • (e) flour tortilla packs
  • (f) salsa negra
  • (g) avocado crema

Equipment Needed

  • 2 skillets or saute pans
  • scissors
  • wooden spoon
  • mixing bowl
  • spoon
  • towel or paper towel

Recipe Directions

  1. For best results, take the turkey out of the refrigerator 10 minutes before starting to cook. If you skip this step, you may need to cook the turkey longer than this recipe card indicates.
  2. Heat a skillet or saute pan over medium-high heat for 2 minutes. When the pan has warmed up, add 1 tbsp of oil or enough to coat the bottom of the pan. Cut open the package of ground turkey (a) and place in the pan. Season with a pinch of salt and pepper. Cook for 2-3 minutes without stirring.
  3. While the turkey is cooking, heat another skillet or saute pan over medium-high heat for 2 minutes. When the pan has warmed up, add 1 tbsp of oil to enough to coat the bottom of the pan. Add the corn, peppers and onion (b) to the pan. Season with a pinch of salt and pepper. Saute for 1-2 minutes, until the vegetables are warmed up.
  4. Return to the pan of ground turkey and stir with a wooden spoon. Cook the meat for another 4-6 minutes or until the turkey has completely browned, stirring occasionally.
  5. When the vegetables are done, pour into a mixing bowl. Add the pre-cooked black beans (c) to the bowl. Pour the chipotle aioli (d) on top. Gently mix to coat everything with aioli. Taste and add salt and pepper if you wish.
  6. Wrap the flour tortillas (e) in a dish towel or paper towel. Warm for 30-45 seconds in your microwave.
  7. We recommend building a taco by spooning some ground turkey on a tortilla, then adding a scoop of corn and black bean mixture (or serve this on the side like a salad). Add salsa negra (f) and avocado crema (g) on top to suit your taste.
