Recipe Ingredients

  • (a) yukon gold potato
  • (b) prime ground beef
  • (c) meatloaf filling
  • (d) dry mix
  • (e) carrot
  • (f) cola glaze
  • (g) chicken stock, honey
  • (h) cream, butter

Recipe Directions

  1. For best results, take the ground beef out of the refrigerator 10 minutes before starting to cook. Preheat your oven to 425 degrees fahrenheit.
  2. Open the container of yukon gold potatoes (a) and use the lid to drain out the water. Add the potatoes to a saucepot and cover with fresh cold water. Put the pot on the stove over medium-high heat. Bring up to a simmer and then turn the heat down to medium or medium-low to maintain a simmer. Simmer for 15-17 minutes.
  3. While the potatoes are simmering, cut open the package of prime ground beef (b) and place in a mixing bowl. Season with a pinch of salt and pepper. Add the meatloaf binder (c) and dry mix (d) to the bowl. Use a wooden spoon or your hands to thoroughly mix everything together.
  4. Line a baking tray with foil. Drizzle oil over the foil and spread the oil over the foil with the back of a spoon or pastry brush. Scoop the meatloaf onto the baking tray and use your hands to form a small loaf for each serving you are making. (Each loaf should be about 3 inches wide x 4 inches long). Place into your 425 degree oven. Bake for 20-25 minutes.
  5. Wait 10 minutes, and then add the carrots (e) to a saute pan. Pour the honey & chicken stock (f) over the carrots. Put the pan over medium-high heat and bring up to a simmer. Once simmering, turn the heat down to medium or medium-low to maintain a simmer. Simmer for 7-9 minutes, or until the carrots are tender.
  6. When the potatoes have been simmering for 15 minutes, poke them with a fork. They should be soft and start to break apart. (If not, cook for another 2-3 minutes and check again.) Pour the cooked potatoes into a strainer in your sink. Allow the water to completely drain. Then cover with foil to keep warm.
  7. When the meatloaf has finished baking, remove the pan from the oven. Spoon the cola glaze (g) over the meatloaf. Turn your oven up to 475 degrees and bake the glazed meatloaf for another 3-6 minutes.
  8. Add the cream and butter (h) to the same pot that you used to cook the potatoes. Season with a generous pinch of salt and pepper. Put the pot on the stove over medium-low heat and cook for 1 minute, stirring while the butter melts. Add the potatoes back to the pot and crush with the back of a fork. Mix with the cream and butter and cook for a few minutes until the potatoes are warm.
  9. Slice the meatloaf and place a slice on each serving plate. Serve the mashed potatoes and honey glazed carrots on the side.
