Recipe Ingredients

  • (a) farro
  • (b) flank steak, marinated zucchini
  • (c) roasted beets
  • (d) herb marinated feta
  • (e) frisee
  • (f) arugula
  • (g) grilled peach and mustard dressing

Equipment Needed

  • cutting board & knife
  • mixing bowl

Recipe Directions

  1. For best results, take the steak out of the refrigerator 5 minutes before starting to cook. If you skip this step, you may need to cook the steak longer than this recipe card indicates. Preheat your oven to 325 degrees fahrenheit.
  2. Fill a 6-quart pot 2/3 full with water. Put the pot on the stove over high heat. Add 2 tbsp of salt to the water. (The water should taste salty). Bring the water up to a boil. When the water is boiling, add the wheat berries (a) to the pot. Cook for 16 minutes.
  3. After the wheat berries have been cooking for 6 minutes, cut open the package of flank steak (b) and place on a plate. Season both sides of the meat with a pinch of salt & pepper. Heat a skillet or saute pan over medium-high heat for 2 minutes. When the pan has warmed up, add 1 tbsp of olive oil or enough to coat the bottom of the pan. Place the steak in the pan and sear for 3 minutes, then flip over using tongs, and sear the other side for 3 minutes. (If you are preparing 4+ servings, sear on both sides for 4 minutes). After searing both sides, place the skillet of steak in your preheated 325 degree oven. Cook for 4 minutes.
  4. At this point, your wheat berries should be fully cooked. Drain the wheat berries in a strainer in your sink. Then rinse with cool water. Let them sit for 1 minute to allow the water to completely drain.
  5. Pour the wheat berries into a mixing bowl. Add the beets (c), feta (d), frisee (e) and arugula (f) to the bowl. Stir well with a wooden spoon to combine all of the ingredients together. Then pour 2/3 of the strawberry and mustard seed dressing (g) into the bowl and mix again.
  6. When the cook time is up on the steak, remove from the oven and let the meat rest for 1-2 minutes on a cutting board. After resting, slice the steak into 1/2 inch thick slices.
  7. Spoon the wheat berry salad on to your serving plates and place the slices of steak on top. Drizzle the remaining strawberry & mustard seed dressing on top of the steak.
