Recipe Ingredients
- (a) tilapia
- (b) asparagus, leeks, snap peas
- (c) gnocchi
- (d) herbed ricotta salata
- (e) basil, parsley
- (f) grated parmesan
Equipment Needed

Recipe Directions
- Cut open the package of tilapia (a) and place on a plate. Season on both sides with a pinch of salt and pepper. Let the fish temper on the plate.
- Heat a skillet or saute pan over medium-high heat for 2 minutes. When the pan has warmed up, add 1 tbsp of oil or enough to coat the bottom of the pan. Add the asparagus, leeks and snap peas (b) to the pan. Season with a pinch of salt and pepper. Cook for 2 minutes, stirring occasionally with a wooden spoon.
- After 2 minutes, add the gnocchi (c) to the pan and spread them out so that each gnocchi is touching the bottom of the pan. Season with a pinch of salt and pepper. Let the gnocchi cook without stirring for 60 seconds. Then stir and turn the heat down to medium. Cook for 3 minutes.
- While the gnocchi and vegetables are cooking, heat another skillet or saute pan over medium-high heat for 2 minutes. When the pan has warmed up, add 1 tbsp of oil or enough to coat the bottom of the pan. Add the tilapia to the pan (with the presentation / nice-looking side facing down) and sear for 3 minutes.
- When the gnocchi has cooked for 3 minutes, remove the pan from the heat.
- When the tilapia has cooked for 3 minutes, use a spatula to flip the fish over. Sear the other side for 1 minute. After searing, turn the heat off but keep the fish in the pan.
- Spoon the gnocchi and vegetables on to your serving plates. Spoon the herbed ricotta salata (d) on top.
- Remove the stems from the basil and parsley (e). Chiffonade the herbs by wrapping the largest leaf around the other leaves and slicing the herbs into thin strips. Sprinkle the chopped basil and parsley and grana padano cheese (f) over the gnocchi and vegetables. Serve the tilapia on the side.
