Recipe Ingredients
- (a) wide noodle
- (b) ginger spiced meatballs, impossible burger
- (c) soaked bamboo skewers
- (d) broccoli crowns
- (e) red curry vinaigrette, scallion
- (f) cashews
- (g) sesame aioli
Equipment Needed
- 4-6 quart pot
- strainer
- mixing bowl
- scissors
- 2 seasoning plates

- wooden spoon
Recipe Directions
- Preheat your grill on high heat.
- Fill a 4-6 quart pot 2/3 full with water. Put the pot on the stove over high heat. Add 1 tbsp of salt to the water. (The water should taste salty). Bring to a boil. When the water has come up to a boil, add the wide asian noodles (a) to the pot. Cook for 6-8 minutes. When the noodles are ready, taste a noodle to ensure it is cooked to your liking (they should be soft). Strain the water and rinse the noodles thoroughly with cold water. Pour the noodles into a mixing bowl. Set the noodles aside while you prepare the beef.
- Use scissors to cut open the package of beef meatballs (b) and place on a plate. Open the package of skewers (c) and lay them beside the beef. (Note: you do not have to soak the skewers as they have been pre-soaked). You will have enough meat to make 2 skewers / serving.
- Divide the beef into equal portions. Form the meat into an oblong, sausage-like shape, and slide onto a skewer. Press the beef around the skewer so that it supports the meat. Repeat with remaining skewers.
- Open the package of broccoli (d) and place on a separate plate. Season with a pinch of salt and pepper. Drizzle a small amount of oil over the broccoli.
- Place the beef skewers horizontally on your preheated grill. Cook for 4-7 minutes (depending on how you like your beef cooked). Place the broccoli on the grill beside the skewers. Cook for 1-2 minutes per side, then place on a cutting board.
- After 4-7 minutes, flip the skewers over and grill for another 4-7 minutes. Check often to make sure the beef is not burning. At any time, if the outside of the meat is getting too charred, turn the grill down to medium. Make a small cut into the middle of one piece of beef to make sure it is cooked to your liking.
- When the beef is ready, transfer to a clean plate and take everything inside. Cut the broccoli into bite-sized pieces. Add to the bowl of noodles. Pour the red curry vinaigrette and scallions (e) on top. Gently mix with a wooden spoon to coat everything with the viniagrette.
- Spoon the noodle & broccoli salad on to your serving plates. Place the beef skewers on the side. Sprinkle toasted cashews (f) on top of the noodles and drizzle sesame aioli (g) over the beef.

Everything smells great but the beef fell off the skewers so we have ground beef chunks instead of skewered meat.
