Recipe Ingredients

  • (a) cut and marinated chicken breast, seasonal vegetables
  • (b) pappardelle pasta
  • (c) zucchini
  • (d) pistachio pesto
  • (e) giardiniera
  • (f) pistachios

Equipment Needed

  • 4-6 quart pot
  • skillet or saute pan
  • wooden spoon
  • strainer
  • scissors

Recipe Directions

  1. For best results, take the chicken out of the refrigerator 10 minutes before starting to cook. If you skip this step, you may need to cook the chicken longer than this recipe card indicates.
  2. Fill a 4-6 quart pot 2/3 full with water. Put the pot on the stove over high heat. Add 2 tbsp of salt to the water. (The water should taste salty). Bring the water up to a boil and then start step #3.
  3. Heat a saute pan over medium-high heat for 2 minutes. When the pan has warmed up, add 1 tbsp of oil or enough to coat the bottom of the pan. Cut open the package of chicken (a) and add the chicken to the pan. Season with a generous pinch of salt and a pinch of pepper. Cook for 90 seconds without stirring. After 90 seconds, gently stir to turn the pieces of chicken over, and then cook for 2 minutes, stirring occasionally.
  4. Returning to the pot, add the pappardelle (b) to the water and cook until the noodles are al dente (about 4 minutes).
  5. When the chicken has cooked for 2 minutes, add the zucchini (c) to the pan. Saute for 1 minute without stirring.
  6. Now turn the heat on your pan down to the lowest setting. Add the pistachio pesto (d) and giardiniera (e) to the pan. Season with a pinch of salt and pepper and stir.
  7. When the pasta has cooked for 4 minutes, taste one noodle to check it is cooked to your preferred consistency. If the noodles are done, strain the water and add the noodles to the pan. Gently stir until the sauce coats the pasta. Taste and add more salt and pepper if you wish.
  8. Serve the pasta in a bowl and sprinkle chopped pistachios (f) over top.

Just made this masterpiece tonight. It was delicious and really perfect. I use paper plates as you can see from my photo but really this deserved a real plate. We loved it ❤️.
