Recipe Ingredients

  • (a) panko
  • (b) brown rice arancini
  • (c) goat cheese
  • (d) zucchini
  • (e) salmon, portobello
  • (f) arrabbiata sauce

Equipment Needed

Recipe Directions

  1. For best results, take the fish out of the refrigerator 5 minutes before starting to cook. If you skip this step, you may need to cook the salmon longer than this recipe card indicates. Preheat your oven to 425 degrees fahrenheit.
  2. Pour the panko (a) onto a plate. Open the container of arancini mix (b). You will have enough of these ingredients to make 2 arancini balls per person. Based on how many servings you ordered, estimate how much of the arancini mix you need to make one ball. Use a spoon to scoop up one ball of arancini mix and place in the palm of your hand. Press down to flatten it out. Place a scoop of goat cheese (c) in the middle of the arancini. Gently fold the arancini mixture around the goat cheese and form a ball. Place the ball in the panko and roll it around to coat all sides, then set aside on a clean plate. Repeat until all of the arancini balls are prepared.
  3. Heat a skillet or saute pan over medium-high heat for 2 minutes. When the pan has warmed up, add 1 tbsp of oil or enough to coat the bottom of the pan. Add the arancini balls to the pan. Saute for 90 seconds, then use a spatula to turn them over and saute on the other side for 90 seconds. When both sides are cooked, place on a baking tray lined with foil or parchment.
  4. Add the zucchini (d) to the baking tray beside the arancini balls. Drizzle 1 tsp of olive oil (per 2 servings) over the zucchini. Season with a pinch of salt and pepper. Gently stir to coat the zucchini with oil. Place the baking tray of arancini and zucchini in your 425 degree oven and bake for 9 minutes.
  5. Carefully wipe out the skillet you were using with paper towel. Cut open the package of salmon (e) and place on a plate. Season on both sides with a pinch of salt and pepper. Heat the skillet over medium-high heat for 2 minutes. When the pan has warmed up, add 1 tbsp of oil or enough to coat the bottom of the pan. Place the salmon in the pan with the nice-looking / presentation side down and sear for 3 and 1/2 minutes. Then use a spatula to flip the fish over. Sear the other side for 1 minute. After searing, remove from the heat but keep the fish in the pan.
  6. Crack open the container of arrabbiata sauce (f) and warm in the microwave for 30-60 seconds. Evenly spoon the sauce on o your serving plates. Using the back of the spoon, spread the sauce out in a circle so that it covers about 50% of the plate.
  7. At this point, the arancini balls and zucchini should be ready. Place them on top of the arrabbiata sauce. Serve the fish on the side.

We've order this a few times and always enjoy it. Making the goat cheese arancini makes it more time consuming to prepare than many other M&R meals but they're delicious so it's worth it.
