Recipe Ingredients

  • (a) salmon, lemon herb olive oil, butternut squash
  • (b) cooked chickpeas
  • (c) artichokes, roasted red peppers, cucumber, pepperoncini
  • (d) grated parmesan
  • (e) spinach
  • (f) greek dressing

Equipment Needed

  • scissors
  • seasoning plate
  • mixing bowl
  • salad tongs
  • skillet or sauté pan
  • spatula
  • plate lined w/ paper towel

Recipe Directions

  1. For best results, take the fish out of the refrigerator 5 minutes before starting to cook. If you skip this step, you may need to cook the fish longer than this recipe card indicates. Preheat your oven to 425 degrees fahrenheit.
  2. Use scissors to cut open the package of tilapia (a) and place on a plate. Season on both sides with a pinch of salt and pepper. Pick up the tilapia with your hand and gently drag one side of the fish across the pan two times (drag it away from you). Then place the fish in the pan. Put the skillet of fish in your preheated 425 degree oven and bake for 2 minutes.
  3. After 2 minutes, take the pan out of the oven and use a spatula to flip the fish over. (Note: if the fish is stuck to the pan, put it back in the oven for 30-60 seconds and try again). Once you flip the fish over, keep the pan on top of your oven (over no heat) and let it sit while you make the salad.
  4. Add the chickpeas (b), artichokes, red pepper, cucumber, and pepperoncini (c) to a mixing bowl. Season with a pinch of salt and pepper. Gently mix with tongs.
  5. Next add the parmesan (d) and spinach (e) to the bowl of vegetables. Gently mix again. Pour the greek dressing (f) over everything and toss.
  6. Spoon the salad on to your serving plates. Place the tilapia on top of the salad.

Easy, healthy and delicious! Salmon was so fresh and didn't smell fishy at all. And it tasted great with the chickpea salad.
