Recipe Ingredients

  • (a) udon noodles
  • (b) red cabbage, poblano peppers, red pepper
  • (c) sesame vinaigrette
  • (d) marinated sliced sirloin, marinated tofu
  • (e) soaked bamboo skewers
  • (f) teriyaki sauce

Equipment Needed

  • 4-6 quart pot
  • strainer
  • mixing bowl
  • salad tongs
  • scissors
  • 2 plates
  • meat tongs
  • small pastry brush

Recipe Directions

  1. For best results, take the sirloin out of the refrigerator 10 minutes before starting to cook. If you skip this step, you may need to cook the sirloin longer than this recipe card indicates. Preheat a grill to high heat.
  2. Fill a 4-6 quart pot 2/3 full with water. Put the pot on the stove over high heat. Add 1 tbsp of salt to the water. (The water should taste salty). Bring to a boil. Pour the uncooked udon noodles (a) into a strainer and quickly rinse off in your sink. Then add the udon noodles to the boiling water. Cook for 6 minutes.
  3. When the noodles are ready, strain the water and rinse the noodles thoroughly with cold water. Pour the noodles into a mixing bowl. Add the cabbage and peppers (b) to the bowl. Season with a pinch of salt and pepper. Pour the sesame vinaigrette (c) on top and mix everything together with tongs or your hands. Then set the salad aside while you prepare the kebabs.
  4. Cut open the package of sirloin (d) and place on a plate. Open the package of skewers (e) and lay them beside the sirloin. (Note: you do not have to soak the skewers as they have been pre-soaked).
  5. Assemble the skewers. The sirloin is cut in strips and you want to use 2 strips for each skewer. You will have enough meat to prepare 1 skewer per person. Push the skewer through the sirloin (lengthwise down the middle of each piece of meat).
  6. Place the prepared kebabs on the grill horizontally and cook for 2-4 minutes (depending on how well you like your steak cooked). Then flip the kebabs over and brush the meat with some of the teriyaki sauce (f). Grill for another 2-4 minutes.
  7. When the kebabs have finished cooking, transfer to a clean plate. Brush with the remaining teriyaki sauce. Spoon the chilled noodle salad on to your serving plates. Place the kebabs on top.
