Recipe Ingredients
- (a) chicken leg, ras el hanout crust, falafel patty
- (b) pita
- (c) greens
- (d) roasted red pepper chickpea dip
- (e) cucumber yogurt sauce
- (f) pickled vegetable medley, greek dressing
- (g) crumbled feta
Equipment Needed

- skillet or saute pan
- tongs
- serving bowls & spoons
Recipe Directions
- For best results, take the chicken out of the refrigerator 10 minutes before starting to cook. If you skip this step, you may need to cook the chicken longer than this recipe card indicates. Preheat your oven to 350 degrees fahrenheit.
- Open the package of chicken (a) and place on a plate. Season with a pinch of salt and pepper. Place the pitas (b) on a baking tray. Drizzle 1 tsp of olive oil over each pita, then turn over on the tray and drizzle another tsp of olive oil on the other side of each pita.
- Heat a skillet or saute pan over medium-high heat for 2 minutes. When the pan has warmed up, add 1 tbsp of oil or enough to coat the bottom of the pan. Add the chicken to the pan, stir once, then let it cook without stirring for 3 minutes.
- While the chicken is cooking, place the tray of pitas in your 350 degree oven and bake for 3 minutes.
- Returning to the skillet, when the chicken has cooked for 3 minutes, stir well and then cook the chicken for another 3 minutes. Larger pieces of chicken may take longer, another 1-2 minutes of cooking.
- Place all of the other ingredients in individual serving bowls : greens (c), hummus (d), cucumber yogurt sauce (e), pickled vegetables (f) and feta (g).
- Slice the warm pitas in half and stuff with chicken. Line up the bowls of vegetables, sauces and cheese so each person can add the toppings of their choice.
