Recipe Ingredients
- (a) ditalini pasta
- (b) fresh mozzarella
- (c) artichokes, roasted red peppers
- (d) pesto
- (e) lemon herb vinaigrette
- (f) italian beef skewer, impossible burger
- (g) soaked bamboo skewers
- (h) tantos cacio pepe chips

Recipe Directions
- For best results, take the beef out of the refrigerator 10 minutes before starting to cook. If you skip this step, you may need to cook the meat longer than this recipe card indicates.
- Fill a 4-6 quart pot 2/3 full with water. Put the pot on the stove over high heat. Add 2 tbsp of salt to the water. (The water should taste salty). Bring the water up to a boil and then add the ditalini pasta (a) to the water. Cook for 11 minutes.
- While the pasta is cooking, preheat your grill or broiler to high.
- After 11 minutes, taste a ditalini and if it is cooked to your liking, drain the water. Rinse the pasta for 1 minute with cold water to cool it off.
- Pour the pasta into a mixing bowl. Add the ciliegine mozzarella (b) and the roasted red pepper and marinated artichokes (c) to the bowl. Season with a generous pinch of salt & pepper. Pour the pesto (d) and lemon vinaigrette (e) on top. Stir well with a wooden spoon to incorporate the ingredients together. Taste and add more salt and pepper if you wish. Chill the salad in the refrigerator while you prepare the beef skewers.
- Cut open the package of italian ground beef (f) and place on a plate. Open the package of skewers (g) and lay them beside the beef. (Note: you do not have to soak the skewers as they have been pre-soaked). Divide the beef into equal portions. (You will have enough meat to make 1 skewer /serving). Form the meat into an oblong, sausage-like shape, and slide onto a skewer. Press the italian ground beef around the skewer so that it supports the meat. Repeat with remaining skewers.
- Place the prepared skewers on the grill horizontally and cook for 2-4 minutes (depending on how well you like your beef cooked). Then flip the skewers over and grill for another 2-4 minutes.
- When the meat is cooked to your liking, transfer to a clean plate and let it rest for 2 minutes.
- Spoon the chilled pasta salad on to your serving plates. Place the italian beef skewers on top. Serve the Tantos pasta chips (h) on the side.
